Should I Take Enzymes With Cooked Meals?

There are several reasons that individuals should take an enzyme supplement when they eat cooked foods. An enzyme called salivary amylase (ptyalin) is released in the mouth and begins to digest starches immediately. You can test this easily by putting a piece of popcorn in your mouth; it should melt rapidly. No such luck with a bit of beef or fats though. Thorough chewing mechanically grinds up the starches, fats, and the protein so that the hydrochloric acid and enzymes in the stomach can chemically break down the components of cooked food. Unfortunately, most people do not chew their food well enough before swallowing. I recommend chewing each bite 25x before taking.

Mixed-up and partially digested food is next dumped into the stomach.
